Capers packed in sea salt have a fresher, almost floral flavour and aroma. They keep their shape and firmness better, too. Ishka Capers in Sea Salt are large sized buds cured only in Tuticorin sea salt and hand turned every 5 to 7 days till they turn tender. This is done under careful supervision so as to allow the capers to be rightly cured. In a strainer, just rinse the capers under water to remove the salt used for preservation. Pat them dry with a towel, and they are ready to use.
